Manzanillo Style Breakfast Burrito

If I could I would probably skip vegetables altogether and instead just stick with fruit. But this is one of the ways I try to squeeze vegetables into my meals.

This is a super easy breakfast burrito to make that gives you a great head start on getting in your all important daily servings of vegetables. Not too many breakfast dishes can make that claim! Now the first time you make this it can look a bit intimidating as the spinach can look almost overwhelming but it reduces greatly during cooking.

I also like to use a mix of egg whites and Omega 3 eggs for maximum protein that when combined with the multiple servings of vegetables make this meal an optimum fuel source. I also like to liberally use the Manzanillo Mexican Seasoning which gives this just enough subtle heat and lots of spice.

What You’ll Need

  • 3 Omega-3 eggs
  • 3 egg whites
  • ¼ cup diced yellow onion
  • ¼ cup diced red bell pepper
  • 2 handfuls of baby spinach (about 2 cups)
  • 2 tbsp reduced fat Mexican cheese
  • 2 tbsp Manzanillo Mexican Seasoning
  • 2  whole wheat flour tortillas

Directions

  1. Add the eggs to a mixing bowl and whisk
  2. Dice your onions and bell pepper
  3. Spray your skillet with Pam spray
  4. Turn the heat on to medium low and add the eggs (I like to cook mine for about a minute before adding other ingredients)
  5. Add the onions, bell peppers, spinach and seasoning
  6. Stir frequently so that the egg does stick and the spinach reduces nicely
  7. Heat the tortillas in the microwave (I wrap mine in a clean kitchen towel and heat for about 20 seconds)
  8. Add the eggs to the tortilla, wrap it up like a burrito and you are good to go!
