We love using pita bread as a mini pizza crust as these are super quick meals that are also healthy and light. Now for our sauces we sometimes use salsa and marinara but for this occasion we used a skim milk ricotta cheese.
Ricotta cheese is one of the staples in our fridge along with low fat yogurt and 2% cottage cheese. Ricotta cheese makes it way into smoothies. A half cup has 12 grams of protein and about 140 calories. I also like the texture that it provides as it adds a nice thickness to my smoothies and an almost richness to our pita pizzas.
This pita pizza is a regular in our rotation of our once a week meat free meal. I sometimes like to add on additional vegetables (especially bell peppers and broccoli). You can then top with some herbs of your choice (basil or oregano) but what I especially like is our Salt Free Pizza Seasoning which has a combination of onion powder, red bell pepper, fennel, Mediterranean oregano, garlic, basil, crushed red peppers, parsley, thyme, marjoram and celery flakes. This just adds an amazing cascade of flavor to these.
But the best part is that this is one of those meals where I was in and out of the kitchen in less than 20 minutes (including kitchen clean up)!

What You’ll Need
- Four 6” Whole Wheat Pitas
- 1 Cup Part Skim Ricotta Cheese
- 2 Tsp Olive Oil
- ½ Cup Part Skim Mozzarella Shredded Cheese
- 16 slices of Tomato (about 1 to 1-1/2 medium size tomatoes)
- ½ Cup of Chopped Onion
- 1-2 Tsp of Pizza Seasoning
What to Do
- Pre-heat your oven to 475°
- Lay your pita out on a baking pan (cookie sheet or jelly roll pan)
- Spread ¼ Cup of ricotta on each pita
- Evenly spread the chopped onions over each pita (aprx. 2 Tbsp for each)
- Drizzle ½ Tsp of Olive Oil on each pizza
- Add 2 tbsp of mozzarella to each pizza
- Add 4 tomato slices to each pizza
- Top with Pizza Seasoning or your favorites Italian herbs
- Place in the oven for 6-8 minutes
